Wedding day is such an important day for a couple. It is the start of a new journey for two people. And the cake can really show off the personality of the couple.
Red velvet cake originates from Southern America and is thought to be about 200 years old. The limelight for the cake started in New York in the 1930s when it was served in the luxury Waldorf-Astoria hotel.
It is debatable why the cake was called red velvet. One theory says that the cocoa powder would react with the acidity of vinegar and buttermilk to give it a dark red hue. Others say it is because originally brown sugar was used for the cake which was also called red sugar then.
John A. Adams with his wife Betty owners of the Adams Extract Company happened to dine in the Waldorf-Astoria. And they realised that they could sell more food colouring with a red cake.
They started marketing the red cake by printing it on cards and merchandising it next to their red food dye bottles.
And since then it has been growing in popularity, and really took off in 2011 according to New York Times.
The trend probably hit Ireland later but it has picked up quickly. About 30% of the cakes that are ordered from Eve’s Cakes are Red Velvet.
Whether thats due to the growing popularity of the cake or just our specific recipe which is a huge crowd pleaser, is debatable.
We also use mascarpone cheese as well as cream cheese to make it even more decadent.
